Iced Vanilla Coffee
Fill glasses with crushed ice. Add 1 tablespoon vanilla extract and fill with coffee. Some folks will prefer to add a bit of sugar. This is one of my favorites. You don’t need cream or sugar, just enjoy.

Sunshine Coffee Cake

Blend filling/topping ingredients together before mixing coffee cake batter. Preheat oven to 375° F. Sift dry ingredients together and cut in shortening. Beat eggs well and add milk. Combine liquid with dry ingredients. Spread half the batter in a greased flat pan 8×8 or 6×10″ Sprinkle with half of filling. Add the other half of the batter and sprinkle with remaining filling on top. Bake for 25 minutes. Cut in squares. |
filling/Topping: 1/2 c. brown sugar
2 tsp. cinnamon
2 Tbsp. flour
2 Tbsp. melted butter
1/2 c. chopped nuts Batter:
1½ c. flour
3 tsp. baking powder
1/4 tsp. salt
3/4 c. sugar
1/4 c. shortening
1 egg
1/2 c. milk |
This time i thought id post 2 recipes, and for some reason these two seem to go together pretty well so here we are. After having a few days of above normal temps i should be seeing more normal days as the week comes to a close, Is any anyone else been getting rather strange weather their way? Richard

Hi everyone and the sun never did seem to be able to peek out today, so all we had over my way was a hot and sticky day.Im thinking that a very hot summer is in store for most of us, i say that because of the very easy Winter we had. So I'm afraid we may have to pay for that in one way or another. Richard
Marilyn the temps were in the 80s over here, but your a little north of me so you guys would naturally be cooler. Everyone has their air conditioning on in both the home and car now, and I'm seeing a lot of open Amish buggies' on the road. But I'm not sure if the heat has anything to do with that or just coincidence. Richard
What a wonderful use for leftover coffee, sounds very tasty and refreshing and I will make it and I will ALSO make that Sunshine Coffee Cake. The title of that recipe alone made me smile on this dreary, rainy day here in Anchorage… temps here in the 50's, cool and very comfortable!Lots and lots of tourists roaming around downtown Anchorage! Halle is at "school" (day care) today so she is not on display today. Smiles to all!
I wish we had the 50's over here now Ina, and id say my idea temp range for me would be between 55-75. But since i dont control the weather (and why not) ill just have to take what i can get, and I wil be by your web site in a day or so Ina. Richard
love iced coffee and coffee cake…more good recipes! I really enjoyed reading Jean's stories about ascension and gender roles. I love being a housewife and doing the "womanly things". My hubby loves doing all the outdoor things and heavy things but will help me inside since I'm disabled.
